I began my morning with a cup of warm water with the juice of half a lemon. A few of the health books that I’ve been reading recommended drinking a cup of warm water with lemon first thing in the morning, so I’ve started doing that the last couple of days. It is supposed to kick start your digestion and help cleanse your liver and kidneys. It also helps to alkalize the blood.
I drank my lemon water while I prepared my eggs for breakfast. 2 eggs scrambled with spinach and topped with the leftover pico de gallo from last night’s dinner.
At lunchtime, I was craving a chicken cobb salad from Market Street. I didn’t really feel like getting out, so Gary went and picked up the salads and brought them home to eat. Since we were eating at home, we were able to dress our salads with a little EVOO and vinegar.
We decided to go for a walk before dinner. The route we took was my favorite spot to run here in our city. I’ve been running it for the last seven years, and it just never gets old. It gets a little more scary trying to cross six lanes of increasingly heavy traffic, but I’m willing to play a little Frogger! 😉
The Shawnee Trail, which was the first North South cattle trail in Texas, ran through our city back in the 1800’s. To commemorate this, there are several bronze cattle and cowboy sculptures throughout a local park and shopping center.
On the steps of a local park, there are “cowboy” quotes like this.
Home of the Roughrider minor league baseball team.
It really is a neat baseball stadium. It kind of reminded me of the Boardwalk hotel at Disney World for some reason when I first saw it.
The usual turnaround point in my run.
Dinner: Hamburger sliders topped with spicy guacamole, pepper jack cheese (half a slice of cheese per burger), tomatoes, and sliced red onion. I used 100% grass-fed beef for the patties. Delish!
The rest of the evening was pretty low key. I spent the rest of the evening working on my blog, then watched a little TV before heading off to bed.
