Tomato and Cucumber Salad

A delicious and fresh salad made with grape or cherry tomatoes and English cucumber tossed with a tasty parmesan garlic vinaigrette dressing.

Ingredients

  • 1 (16-ounce) container of cherry or grape tomatoes, sliced in half or quartered if large
  • 1 english cucumber, quartered lengthwise and sliced 1/4-inch thick
  • 3/4 cup thinly sliced green onion (green parts only)
  • 1 large clove of garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 cup grated Italian Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp fine sea salt

Instructions

  • In the bottom of a large bowl, whisk together the olive oil, vinegar, garlic, sea salt and Italian seasoning. Add the cheese and gently whisk again. 
  • Add the vegetables and toss well to combine. Serve immediately or cover and refrigerate until ready to serve. Salad will keep for two days but will get more watery as it sits. 

Notes

If you can't find or want a slightly less expensive option than Parmigiano Reggiano cheese, you can substitute Grana Padano cheese. They are similar in flavor and both are available at Trader Joe's.
