1 1/4poundfresh ripe peaches, diced
3mediumvine-ripened tomatoes, diced
2/3cupfinely chopped red onion
1/2cupchopped fresh cilantro
1largejalapeƱo, seeds and ribs removed if desired, minced(2 if small)
1tbspfresh lime juice
1tspfine sea salt
1/4tspground cumin
Instructions
In a large bowl, add all of the ingredients and gently stir until well combined. Use a tortilla chip to taste test, then serve. Or if making a few hours ahead, cover and refrigerate until ready to serve.
