Red Bean & Sausage Soup

Ingredients

  • 1 Cup dried red beans , soaked overnight or for 8 hours
  • 7 Ounce smoked turkey sausage , cut into 1/2 dice
  • 3 carrots , chopped
  • 3 stalks of celery , chopped
  • 1 medium russet potato , diced
  • 5 cloves of garlic , chopped
  • 1 large red onion , chopped
  • 5 Cup chicken stock
  • 1 Tablespoon creole seasoning (such as Tony Chachere)
  • 1/2 Teaspoon onion powder
  • salt to taste
  • Optional garnishes cajun pepper sauce , chopped parsley

Instructions

  • In a four quart slow cooker, add the first ten ingredients. Cook on high for five hours. Check seasonings, and adjust if necessary. Serve with cornbread.
