Fresh Mexican Salsa

Recipe adapted from the Bold and Healthy Flavors cookbook by Stephen Raichlen

Ingredients

  • 3 medium vine-ripened tomatoes , finely diced
  • 2/3 cup finely chopped red onion
  • 1 clove garlic , minced
  • 1 large jalapeno (or 2 small), finely chopped (seeds and ribs removed)
  • 1/3 cup finely chopped fresh cilantro
  • 1 tbsp . fresh lime juice
  • 1/4 tsp . ground cumin
  • 1/2 tsp . salt

Instructions

  • Place all ingredients into a medium sized bowl and mix to combine. Check seasonings and adjust if necessary. Serve with tortilla chips.

Notes

You really want juicy, vine-ripened tomatoes for this recipe.
