Spicy Tomato Sauce

I’ve never been a big fan of store bought tomato sauce, even as a kid. Being a pasta lover, I decided that I would try to come up with my own homemade version and see if I could create something that I could enjoy more than the jarred stuff. This tomato sauce is spicy and full of veggies.

What you will need.

Finely chop 1 medium onion.

Next, finely chop 1 medium carrot.

Then, finely chop 1 celery stalk.

Take 1/2 of the bell pepper and chop it finely.

Take the two garlic cloves and finely mince them.

Using a large skillet, heat olive oil over medium-high heat.  Add the onions and saute until translucent. About 5 minutes.

Next, add celery, carrots, red bell pepper, and garlic.  Saute until all veggies are tender. (about 10 minutes)

Add in the crushed red pepper flakes, oregano, and salt.

While that is working, open your can of whole tomatoes and place in a bowl.

Using kitchen shears chop up the tomatoes. You can also crush them with your hands. It’s your call.  You can also just buy already crushed tomatoes, but I think the flavor of the tomatoes is better when you buy them whole.

Add them into the skillet.

Simmer over low heat uncovered until the sauce thickens, about an hour.

Serve over pasta or chicken. Top with grated parmesan cheese.
