My Meal Plan: Week of September 16

Happy Monday, y’all! I hope that you all had a great weekend! I spent  a good part of last night looking up recipes for this week’s meal plan. I am looking  forward to trying out some new recipes this week. I also plan to make a grain-free version of my Buffalo Chicken Chili and will be posting that on here soon. We haven’t made a big grocery shopping trip in a while, so that is on the schedule for this afternoon. We plan to hit up the new Trader Joe’s first. I’ve never been to one, so I’m pretty excited!

Monday

Brunch: Green Eggs and Turkey

Dinner: Mustard Lime Chicken, Mashed Chipotle Sweet Potatoes, sauteed spinach (using coconut oil)

Tuesday

Breakfast: Kale Mushroom Omelet

Lunch: Leftovers from last night’s dinner

Dinner: Buffalo Chicken Chili (test recipe) served over Cauliflower “Rice”

Wednesday

Breakfast:  Kale Mushroom Omelet

Lunch: Leftover chili

Dinner:  Italian Sausage and Kale Soup 

Thursday

Breakfast: Bacon Sweet Potato Breakfast Hash

Lunch: Leftover soup

Dinner: Chipotle Lime Salmon w/ Cauliflower Rice

Friday

Breakfast: Leftover Breakfast Hash

Lunch: Turkey Patties w/ steamed veggies

Dinner: Chicken fajitas or tacos (using lettuce cups as tortillas)

Saturday

Lunch: Leftover turkey patties

Dinner: eating out
