Mediterranean Turkey Wrap



In my last blog post, I mentioned a sandwich that my husband had last Tuesday at the Panera Bread Cafe. It was their Mediterranean Veggie sandwich. My husband took one bite, and told me that I just had to try it. It is served on their tomato basil bread, which was very fresh and soft.  They use a cilantro jalapeno hummus in place of a standard sandwich dressing. The rest of the ingredients consist of lettuce, cucumbers, piquante peppers, sliced tomato, and feta cheese.

I decided that I must try, and come up with my own version of this tasty sandwich.

I had never heard of piquante peppers before that day. These little peppers are sweet and very mild in terms of spiciness. I actually prefer the flavor of these over roasted red peppers. They are a key flavor component in this sandwich. The Peppadew brand of piquante peppers was the only brand that I found at my grocery store. Their website says that they are available at most major supermarkets. I urge you to try them if you haven’t. I am already thinking up more ways to use them in the future.

While shopping in the bakery department of the grocery store, I had a sudden thought. I remembered that the La Tortilla Factory brand sells a Tomato Basil Soft Wrap. It’s high in fiber, and a lot lower in carbs than Panera Bread’s tomato basil bread, which you can purchase at their restaurant. Love it when those kind of ideas pop into my head!

Here is what you will need to make these wraps:



Turkey sandwich meat, cilantro jalapeno hummus (homemade or store-bought) spring salad mix, english cucumber slices, piquante peppers, four tomato basil wraps.

Oops, almost forgot an important ingredient. Feta cheese crumbles.



Slice up some piquante peppers. You will need six peppers if you are making four wraps, but I was only making lunch for my husband and me, so I only chopped up three.



Place one wrap onto a plate.



Spread one heaping tablespoon of cilantro jalapeno hummus evenly down the center of the wrap.



Lay three slices of turkey, slightly staggered, down the center of the wrap.



Throw on some lettuce.



Top with some cucumber slices.



Add the piquante peppers.



Sprinkle on some feta cheese crumbles.



Turn the plate so that the fillings are horizontal to you. Taking the edge closest to you, fold the wrap over the fillings, pulling back slightly.



Tuck in the ends.



Finish rolling the wrap over.



Cut the wrap in half on an angle.



Continue building until all four wraps are made, or however you need at that moment.

Mediterranean Turkey Wrap

Ingredients

  • 4 tablespoons of cilantro jalapeno hummus (homemade or store bought)
  • 12 slices of turkey sandwich meat ( you may need more if slices are super-thin)
  • 4 cups of spring salad mix
  • 16 thin slices of english cucumber
  • 6 piquante peppers , sliced
  • 4 tablespoons of crumbled feta cheese
  • 4 tomato basil wraps ( I used La Tortilla Factory Soft Wraps)

Instructions

  • Place a wrap onto a plate. Spread a heaping tablespoon of the hummus evenly down the middle of the wrap. Place three slices of turkey, slightly staggered down the center of the wrap. Top with one cup of salad. Place four slices of cucumber on top of the lettuce. Add one-fourth of the sliced piquante peppers. Sprinkle with the feta cheese. Depending on the type of wraps used, you may need to microwave them for a minute to make them more pliable. Turn the plate so that the filling are horizontal to you. Take the edge of the tortilla closest to you, fold it over the filling, pulling it back slightly towards you. Tuck in the ends of the tortilla or wrap, and finish by rolling it the rest of the way over.
