Low-Carb Diet – Weekend Eats

Just in case you are new here, or haven’t been here in a while, you may be wondering what’s up with all of the low-carb posts. If so, you may want to go back and read my post on the new focus of my blog, where I detail why we are currently on a low-carb diet.

Hope that you all had a great weekend! It was an extremely beautiful weekend here in north Texas!

I didn’t do a great job at documenting everything I ate this weekend, but I did take pictures of some of our meals.

Brunch on Saturday:

Three-egg omelet with some orange slices. There was only one orange left so I split it with Gary.



For dinner, I was craving a burger from In-N-Out, but they were super busy when we drove by there, so we decided to make our own at home. We picked up some grass-fed ground beef from Sprouts and some blue cheese. I already had some butter lettuce at home that we planned to use for the “buns”.



Beef + blue cheese = delicious!

I actually ended up eating two of these burgers because I was still hungry after finishing this one.

Sunday

It was a gorgeous day, so decided to go grab some salads at Market Street and eat outside. They didn’t have our usual pre-packaged salads today, so we built our own at the salad bar. I actually liked that better because I could get a couple of things that didn’t come on our usual salad.



The price actually ended up being slightly cheaper than the pre-packaged ones. I don’t understand why, but the same pre-packaged salad costs two dollars more at the Allen and McKinney store locations than at the Frisco and Plano stores. What’s up with that, Market Street?

Instead of my usual sparkling mineral water, I got a Penta water. It’s ultra-purified and the bottle says that it’s supposed to be arsenic and trace pharmaceuticals free. Always good qualities to have in your water. 😉



We tried a different frozen yogurt place on Sunday, but I didn’t really care for their yogurt. It wasn’t just the flavor that I didn’t like, but they also use aspartame in their sugar-free options. Not that I let a little aspartame deter me from getting my FroYo fix. 😉

We decided to try out something new for dinner Sunday night. Chicken fajitas using butter lettuce as the “tortillas”. So.Good! We used to have fajitas on a weekly basis, so I’ve really missed them the last couple of weeks. I didn’t know if how well the butter lettuce would hold up, but it worked just fine. Definitely making these again!
