Low-Carb Diet (Day Three)

I decided to be a little different, and have my eggs sunny side up. That just sounds like a happy way to start the day, doesn’t it? Anyway, I fried my eggs in a little coconut oil, served them over a bed of baby spinach, and threw in a leftover zucchini pancake from dinner last night.

It’s funny, growing up I never had “over easy” or “sunny side” up eggs (my mom thought we would die or get really sick or something). A few years ago, while on vacation, I had my first taste of eggs “over easy”. I had ordered “over hard” eggs, but they brought me “over easy” eggs instead. I don’t like to send food back (I prefer my food “sneeze” free), so I just ate it. One bite, and I was hooked. I finally got what all of the people on the Food Network were talking about. They were DELISH! All those years, I was missing out on that runny yolk goodness!

In case you’re interested, these are the two brands of eggs that I have recently started buying. When our food budget allows, I get the organic pasture-raised eggs from Vital Farms.

I can tell the difference in quality from the hardness of the shell, to the beautiful orange yolk, to the amazing taste. Unfortunately, quality doesn’t come cheap at $6 – $7 dollars a dozen, depending on where you buy them. We go through a lot of eggs, so this isn’t always economically feasible for us.

The other less expensive, but still good, brand that I buy is the Christopher Eggs brand.

They run about $2.79 at our local Kroger. Depending on the store that sells them, the carton/name will look different, but it will say Christopher on the top of the carton as well. These eggs have a 1:1 ratio of Omega 6 to Omega 3. Just in case you are interested in why this is important, here is an article that explains how too much Omega-6 and not enough Omega-3’s is making us sick.

Okay, enough about eggs. On to lunch. Today, I made tuna salad and served it in red cabbage cups. My husband liked it, but I wasn’t as big of a fan of the cabbage/tuna combo.

I have recently started buying tuna and salmon in BPA free cans. Again, this is when our food budget allows because it, too, is a little pricier, but the quality is also better. The two brands of canned tuna that I like are Sustainable Seas and Wild Planet The Wild Planet Alaskan Sockeye Salmon flavor is SO much better than Honey Boy or Chicken of the Sea.

I try to stock up when these brands are on sale. Kroger actually had the Wild Planet tuna on sale recently for buy 1 get 1 free, and the salmon was half-price. I will definitely be keeping my eye out for another sale like that. 🙂

Dinner: Someone forgot to put the ground chicken in the fridge to defrost, and someone didn’t realize this until too late (I really hate defrosting meat in the microwave), so we didn’t have what I had planned to make. Really need to have a talk with that someone! Maybe I subconsciously didn’t place it in the fridge so that I wouldn’t have to cook? 🙂 Seriously, that is one area I really have to work on – planning and preparing things ahead to avoid problems like this. We needed a couple of things from the store anyway, so we stopped in at Market Street.

While there, I checked out their prepared foods section to see what they might have that would work for dinner. We picked out the chicken cobb salads (my new favorite kind of salad) It was such a nice evening, we just decided to grab some sparkling water and eat on the patio there.

Since they had no dressings there without soybean oil or a dozen other funky ingredients, we skipped it. I really didn’t even miss it to be honest. The price was good, and we were able to stay on our low-carb, grain-free diet. Win-Win! 🙂
