Low-Carb Diet (Day Six)

I am running a little behind in getting this latest post out. I chose to watch TV last night instead of writing my post. One of my favorite shows, The Killing, was on last night. It was a pretty good episode, but the next one looks even more interesting. AMC really does make some good shows! Although, I will admit, Mad Men is NOT one of them. We tried to watch it one time, and just didn’t care for it.

Breakfast: Eggs cooked sunny side up, and a little cantaloupe. There wasn’t much left of the small container that we bought, but we shared what there was. Wish that we had gotten the bigger container because it was actually pretty good.



For lunch, we had the last of the chicken patties that I made on Friday. I melted a slice of pepperjack cheese over the top. Yum! On the side, we had small organic baby romaine salad dressed with a balsamic vinaigrette, and steamed cauliflower.



A new favorite snack of mine is guacamole and celery sticks. I came across a recipe over on the Everyday Paleo site that sounded interesting. She poured a balsamic vinaigrette dressing over avocado halves and served them that way. Anyway, the next time I made guacamole, I decided that I would try a little balsamic vinegar in place of the lime juice, and see if I liked it.

It was SO good! I never would have thought to pair balsamic vinegar with avocados, but it works! I just added a tiny bit of seasonings, and snack was ready.

If you’re interested, here’s what I used:

1 whole large avocado
1 1/2 tsp balsamic vinegar
dash of each of the following: onion powder, garlic powder, ground cumin, cayenne pepper (optional)
salt to taste

Mash the avocado to desired consistency, then stir in the remaining ingredients. Serve immediately.

I’ve always loved this tasty little green treat, but after reading more about all of the health benefits of avocados, I love them even more. They really are a super food, and I plan to incorporate more of them into our diet.

Oh, and just in case you’re interested, this is listed as one of the six foods for better sex. 😉 Ha! I blushed a little just writing that!



Exercise for the day: walk around the neighborhood.

Since we weren’t having dinner right after our walk, I ate a small fiji apple to tide me over.



Dinner: Salmon cakes, baby arugula salad, and steamed broccoli.

Normally, I would have used bread crumbs or corn starch to make the salmon cakes, but since we are doing low-carb (and grain-free), I decided to try a little almond flour. They turned out okay, but were a little on the dry side. Next time, I will use less and see how that works. They still tasted good.

The baby arugula salad included thinly sliced red onion, and kalamata olives, and was dressed with a lemon vinaigrette. The steamed broccoli was seasoned with butter and sea salt.
