Low-Carb Diet (Day 7)

We stayed up pretty late last night, so I was dragging this morning. Breakfast was a 2-egg omelet, but I forgot to take a picture. I was really wishing that I still had some cantaloupe.

By the way, did you guys see the crazy expensive cantaloupe that they are now selling over in Japan? People over there are paying fifty to a hundred dollars for this melon. As if that wasn’t steep enough, the choicest pairs have been auctioned off for $26,000! Insanity!

Lunch: We had leftover salmon cakes (love having leftovers!), organic baby arugula & red onion salad with a lemon vinaigrette, and steamed broccoli seasoned with butter and sea salt.

Snack time also featured a repeat. I called this guacamole in my last post, but avocado dip is probably more appropriate since it doesn’t contain the typical guacamole ingredients. In case you missed it, I posted the recipe for this avocado dip in my last post.

Dinner was my favorite meal of the day. Sliced chicken breast topped with a basil butter sauce (can’t really see it in the photo), and green beans with onion. Delish!

Hope your week is off to a great start!
