Low-Carb Diet (Day 17)

Just in case you are new here, or haven’t been here in a while, you may be wondering what’s up with all of the low-carb posts. If so, you may want to go back and read my post on the new focus of my blog, where I detail why we are currently on a low-carb diet.

Another beautiful day here in North Texas! We are trying to enjoy each beautiful (and not too hot) day that we have before the summer heat really gets here.

I ended up sleeping late today, so instead of eating breakfast, we just had an early lunch.

Hurray for leftovers! Buffalo Chicken & Veggie Chili



Amazing how natural light can make this look so much more appetizing (to me) than fluorescent lighting can. Today’s picture is SO much better than the one from last night.

Before Gary and I left home and headed to Starbucks, I had a handful of almonds (forgot to take a pic, but you know what that looks like, right?).

One tall caffe americano without sweetener.



After working/blogging at Starbucks for a couple of hours we headed over to CherryBerry for some frozen yogurt. I think I’m addicted. 🙂 Again, this isn’t my all-time favorite yogurt place, but it is pretty good. Plus, it was the closest one to where we were today.

Vanilla and Strawberry (non-fat, no sugar added) with a few sliced strawberries. Gotta watch the toppings. That’s where the cost can really start to add up. 🙂



We stopped at couple of other places before deciding it was time for dinner. By this point it was after nine thirty, so we wanted something that would be quick to get. We thought about going back to In-N-Out, but we weren’t really in the mood for a burger, so we decided to go to Panda Express instead.



I had the mushroom chicken as my entree. It’s funny, I don’t care for mushrooms, but I like the flavor of this dish. I do eat a few of the mushrooms since they are supposed to be REALLY good for you, but I give my husband some of them, especially if they are really large slices. For my side, I had the mixed veggies. The mixed veggies include carrots, but I just picked those out since they are higher in carbs. I used to get the chow mein noodles before we started going low-carb. They changed their chow mein noodles not too long ago, and I don’t like them as well anyway.
