Low-Carb Diet (Day 14)

Just in case you are new here, or haven’t been here in a while, you may be wondering what’s up with all of the low-carb posts. If so, you may want to go back and read my post on the new focus of my blog, where I detail why we are currently on a low-carb diet.

My insomnia kept me up most of the night, so I ended up sleeping in this morning. I had a late breakfast, which was the same as yesterday, so I just decided to recycle the picture for today.

Sunny side up eggs, a little sliced cantaloupe, and Tazo Awake tea. It’s funny, I never really bought cantaloupe much before, but now I’ve actually been craving it.

Fun Fact: Did you know that cantaloupe derives its name from the Italian papal village Cantalup?

I was very grateful that I had leftover salmon cakes when lunch time rolled around. All I had to do was just steam some green beans and heat up the salmon cakes. Lunch done!

Snack of the day: one blurry handful of almonds. 🙂

A little while later, my husband and I packed up our laptops, and headed over to Starbucks. Tall Iced Caffe Americano’s for both of us. I added a little of the Chocolate seasoning that they have on mine, but I really couldn’t taste it. I should have gone with cinnamon, which I think is quite tasty.

After we left Starbucks, we ran by Kroger to pick up a few things. It was fairly late in the evening, so I decided that I would just throw together some turkey patties and steam some veggies for dinner.

I seasoned the ground turkey with some salt and pepper, then cooked the patties in a little coconut oil. I melted a little pepperjack cheese over the top of them for extra flavor. I steamed a bag of frozen broccoli and cauliflower and seasoned it with a little butter and sea salt. Simple and tasty. Ground meat is so versatile that it makes it really easy to throw a healthy dinner together super fast.

What is your favorite go-to meal when you get home late or just don’t feel like cooking?
