Low-Carb Diet (Day 13) Weight Loss Update

Just in case you are new here, or haven’t been here in a while, you may be wondering what’s up with all of the low-carb posts. If so, you may want to go back and read my post on the new focus of my blog, where I detail why we are currently on a low-carb diet.


It’s now been two weeks since we first started eating lower carb, and I can honestly say that it hasn’t been too bad overall. Granted there have been a couple of days recently where I felt a little depressed, and all I wanted to do was call up Papa John’s. Like many people, I’m an emotional eater, and nothing is more “comforting” to me than a fresh hot pizza when I’m feeling blue. And I’m not talking about just eating one slice. I used to eat 3 slices of a large Papa John’s pizza in one sitting and then eat another slice the next morning for breakfast. We were doing that on a regular basis there for awhile, so it’s no wonder I gained 8 pounds in a few months.

I can honestly say that I do feel better eating less carbs. I don’t have that bloated, sluggish feeling that I used to have. My jeans are feeling a less tight, which I am really happy about. I will be posting our weight loss stats at the end of this post, but first a recap of Day 13 meals.

Breakfast: Sunny side up eggs, a little cantaloupe, and a cup of Tazo Awake tea.



Lunch: Avocado Chicken Salad in Lettuce Cups. This is the same mayo-free chicken salad that I made last week, only I had cabbage cups instead of lettuce. Much tastier this way, although it’s not exactly the most colorful lunch ever, is it?



Snack of the day:

One medium Fuji apple with a tablespoon of almond butter. I hadn’t tried almond butter before yesterday because I never could bring myself to pay that much for a jar of nut butter. I mean, $10-$12 for a jar of organic natural almond butter, seriously? Six bucks for a jar of organic natural peanut butter is about my limit. Our Kroger has a couple of nut grinders like Whole Foods does, so while I was there the other day, I decided that I would get just a little to try without having to buy a full jar. We both loved it, especially with the apples!

My husband had a meeting last night, so I ended up eating one hard-boiled egg to tide me over until he got home for dinner.

For dinner, I made salmon cakes with lime and cilantro, a italian blend salad dressed with a red wine vinaigrette, and steamed broccoli seasoned with a little butter and sea salt. I used almond flour in the salmon cakes again, but I used half of what I used last time, which worked out much better.

Now, on to our weight loss stats as promised.

My husband has lost another 3 pounds, and I have lost another pound. Not as good as last week, but I wasn’t too surprised. Last week’s higher weight loss totals were probably due to water weight. Still, I am very happy with the results. A pound lost is a pound lost. 🙂
