Low-Carb Diet (Day 8)

It was a super cloudy morning, which did not make me want to get out of bed, but I managed to drag myself to the kitchen and prepare breakfast. I made us each a 2-egg omelet with chopped red bell pepper. Please ignore the fact that I overcooked mine a little. Fortunately, the meals improved as the day went on.



The other night when I cooked the chicken breasts for dinner, I went ahead and cooked one extra so that I could make chicken salad with it for lunch the next day. I didn’t have any mayo, so I decided to use the avocado I had on hand. I basically made my avocado dip that I am currently obsessed with, and added a little EVOO to give the salad more moisture. This is the first time I had ever tried this, and I loved it! The only thing that would have made it better is if I’d had lettuce cups instead of the cabbage. I still had a little of red cabbage left, and it was at the point where I needed to use it or lose it. Hate to see good food go to waste. I can’t wait to make this again using lettuce cups. So.Good.



Snack of the day: a few almonds.



Exercise of the day: A long walk around the neighborhood with my husband. The cooler weather we had today made it much more enjoyable.

Dinner was the best meal of the day. When I first began researching diet/health books, Suzanne Somers’ books were some of the first ones that I checked out of the library. While I ultimately decided that her “Somersizing” plan wasn’t for us, I did think that several of her low-carb recipes sounded pretty good. Dinner tonight was a recipe from her Suzanne Somers’ Fast & Easy cookbook.



The recipe was for a cheeseburger pie, and it was listed as a fast & easy recipe. Fast, easy, and cheesy? Sounds like my kind of recipe! 🙂

I decided to turn it into more of a Tex-Mex cheeseburger pie. I added some chili powder, cumin, red bell pepper, and some fresh cilantro. I haven’t really had any Tex-Mex food since we started our new diet, and I’ve had withdrawals missed it.

It tasted every bit as good as I thought it would. The crispy, cheesey edges were the best part. My husband said that he could have eaten the whole pan, so I think he liked it too. 😉 I’m looking forward to leftovers!
