Daily Dish

Man, this week has flown by!  It seems like just yesterday I was visiting my family on Father’s Day.   I stayed up late working on some stuff last night, so I ended up sleeping in and not having breakfast this morning.

Lunch:

Leftover salmon sweet potato patties and organic green beans. So good!

We haven’t really been out much lately, and I’ve been missing my frozen yogurt, so a trip to Yogolution was definitely needed today.

My usual:  Strawberry-Banana and Thrilla in Vanilla (no sugar added) with a few sliced strawberries.

It was pretty warm out there today, and this was the perfect treat!

We stopped at a Starbucks in McKinney after we left the yogurt shop to grab a cup of coffee and do some work on our laptops. I had a plain iced coffee, but apparently my need for caffeine trumped my need to take a picture. 😉

After we left Starbucks, we headed to Sprouts to grab something to make for dinner. They had their chicken on sale today, so I got a large package. My plan was to cook all of it tonight, so that I’ll have chicken already cooked for our lunch tomorrow.

I plan to make avocado chicken salad and serve it in the lettuce cups leftover from tonight’s dinner.

Dinner:


Chicken fajitas served in lettuce cups with pico de gallo, cheese, and guacamole. Can you tell from the picture above what main fajita ingredient someone forgot to cook?  How did I possibly manage to totally forget the peppers and onions?  As a Texan, you would think that I wouldn’t be able to forget one of the main ingredients of fajitas. I was trying to wash the lettuce leaves and get the guacamole made while the chicken was cooking. The peppers and onions just never crossed my mind.  Oh well,  they tasted great anyway!
