Daily Dish (Wednesday)

I’ve been so busy the last few days that I haven’t had time to do much cooking or blogging lately. Things have calmed down now though, so I will be doing more of both now.

Our fridge is kind of bare because we haven’t been grocery shopping, so I just had two eggs sunny side up for breakfast.

My husband is the designated coffee maker in our household. I never can get it to taste quite as good as he does. We recently picked up a package of this Gevalia coffee at Super Target.

We really like Starbucks and Dunkin Donuts coffee, but I have to say that the Gevalia really is pretty good. It’s usually a little cheaper too.

While we were at Super Target, I picked up a couple of pre-made cobb salads for our lunch today.

We didn’t have time to do a major grocery shop, so I just grabbed those to make it easy. We had them last week while we were moving, and we both liked them. My only complaint would be that they go a little heavy on the blue cheese. I mean, I love blue cheese, but a little bit goes a long way.

While I was getting the salads, I noticed this package of Cedar’s roasted red hummus.

I prefer my spicy roasted red pepper hummus that I make, but this one actually wasn’t too bad for store-bought.

Shortly after I ate my snack, we headed over to a nearby track to get a quick workout in.

We walked to the track (about 3/4 mile roundtrip), and I did two miles of run/walk intervals. We haven’t been working out lately, and it really showed in my workout. Based on my workout tonight, it’s hard to believe that I ran a 15K just last October. It’s amazing how quickly you can get out of shape.

The sun was setting as we headed back home.

After a quick shower, I did a quick Google search to see if I could find a recipe for salmon sweet potato patties. Monica over at Run Eat Repeat had mentioned something about crab cakes made with sweet potatoes on her blog. I thought that sounded interesting and wondered if salmon could be substituted for the crab meat.

I found several recipes online for salmon sweet potato patties, but none of them were exactly what I was looking for. I either didn’t have all of the ingredients or they called for bread crumbs.

I took some different ideas from a few websites and made my own version. I decided to try baking them this time instead of cooking them in coconut oil for a change.

I had some diced sweet potato in the fridge, so I just cooked those in the microwave for a few minutes, then I mashed them before adding them to the salmon.

One of the websites said to bake them at 350 degrees for thirty minutes, flipping them after the first 15 minutes. I started out at this temp, but they didn’t seem to be browning. After about twenty minutes, I raised the oven temp to 400 degrees and baked them for another 15 minutes.

I made 4 large patties instead of 8 small ones, but I think it would have been better to make 8 patties and bake them for 20-25 minutes at 400°. I will try that next time to see if that works out better.



These were so tasty! My husband took one bite and said that they tasted like crab cakes. He loved them. I liked the sweetness that the sweet potatoes gave to the salmon patties. I will DEFINITELY be making them this way again.

My husband, who isn’t the biggest fan of salmon patties, said that he wouldn’t mind eating them if I made them this way every time. This is a great post work-out meal to have as well.
