Daily Dish (Friday) and Movie Night

Have you ever gone to make a meal only to realize you don’t have what you need to make it? Well, yesterday morning was one of those days here in our house. I got the skillet out to make breakfast for us, then went to the fridge to get the eggs. I opened the carton to find one egg. One egg for two people. The bad thing was that I was the last one to make eggs, so I should have remembered to get some when we were out the day before. 🙁

I offered the remaining egg to my husband, but he said he wasn’t that hungry. I knew that one egg wouldn’t really do much for me, so I just skipped breakfast. We had an early lunch instead.

Snack of the day:



In the cup: non-fat, no sugar added Strawberry-Banana, Vanilla, and a few sliced fresh strawberries.

With temps in the mid-nineties here in Texas, frozen yogurt is definitely a welcome treat. Yogolution in McKinney is probably my third favorite yogurt shop here in our area.

After we left the yogurt place, we headed to Starbucks to work/blog on our laptops.



I decided to make chicken fajitas for dinner. The butter lettuce “tortillas” worked so well last time that I used them again. I made some of my spicy guacamole to go along with it. I didn’t have any canned chipotle peppers, so I used chipotle chili powder instead. I had bought some pre-made pico de gallo at the store, but it had absolutely no flavor, so the fajitas weren’t nearly as good as they could have been. 🙁 It seems like Whole Foods is the only store that knows how to make good pico de gallo, and this was a far cry from theirs.


After dinner, we watched the movie We need to talk about Kevin.



I can’t say that I loved the movie. It wasn’t what I thought it was going to be. I will say this. The woman that played the mom, and the boys that played the son (at different ages) were really believable in their roles. The boy actors were almost a little TOO believable. Very creepy! If you aren’t sure whether you want to have kids or not, this movie will NOT make you want to have one. 🙂

Tomorrow is the Wounded Warrior Half-Marathon over in Las Colinas. A few months ago, I thought I was going to be running it. Unfortunately, I developed a painful shin splint in my right leg that took FOREVER to heal, so I wasn’t able to train for it. Hopefully, I will have another shot to run a half-marathon this Fall. 🙂
