Cooking a Whole Chicken

Today, I wanted to share with you an accomplishment that I am very proud of.



Up until last week, I had never purchased, nor cooked a whole chicken EVER in my life. The thought of cooking a whole chicken was more than just a little scary to me. Something else that I had never done before?  Butterfly a chicken. Carrie over at Deliciously Organic has a great photo tutorial on how to butterfly a chicken which helped me tremendously. Thanks a million Carrie!

I spooned some softened butter under the skin of the breast, and rubbed the entire surface of the bird with it as well. I cooked the chicken in a large pan on a bed of chopped carrots, celery, and onions.



I honestly didn’t think that I was capable of cooking a whole chicken, much less one that turned out as good as this one did. Turns out, I was wrong. Now, I want to try making more dishes that I have been too afraid (or too lazy) to attempt. I am sure that they won’t all turn out as well as this one did on the first try, but as Julia Child once said  “…no one is born a great cook, one learns by doing.”
