Chipotle Chicken Burgers With Spicy Slaw

I’ve been on a really big Chipotle kick for the last several months. It just adds such amazing flavor to all kinds of dishes. The flavors of the chipotle peppers and chicken together really is a match made in heaven.

You will need to prepare the slaw topping at least two hours prior to making the burgers.

Here’s what you will need.

For the slaw topping:

3 cups pre-shredded coleslaw mix, 1 tbsp. mayo ( I used reduced-fat mayo), 1 tbsp non-fat greek yogurt, 1 tbsp Tabasco brand Chipotle sauce, 1/3 cup thinly sliced red onion, 1/2 tsp. each of celery seed, paprika, and ground cumin, 1/2 tsp. honey.

Place 3 cups of pre-shredded coleslaw mix into a bowl.

Thinly slice a 1/3 cup of red onion.

Add the sliced red onion to the bowl and toss together.

In a small bowl, add 1 tbsp each of reduced-fat mayo, Greek yogurt, and Tabasco brand Chipotle Sauce.

Next, add 1/2 tsp. each of celery seed, ground cumin, and paprika.

Add in 1/2 tsp of honey.

Mix ingredients together, then add to the coleslaw mix.

Toss together to combine.

Cover and place into fridge to let chill for at least two hours prior to serving the burgers.

For the burgers:

1 lb. ground chicken breast, 1/2 tsp. each of chili powder, onion powder, garlic powder, salt, 1 tsp. cumin, 1/2 cup old-fashioned oats (uncooked) , 1/3 cup Chipotle salsa, 1/3 cup finely chopped red onion, 2 lightly beaten egg whites.

Place the ground chicken breast into a bowl.

Add 1/2 tsp each of onion powder, garlic powder, salt, chili powder, plus 1 tsp. of ground cumin.

Next, add 1/2 cup old-fashioned oats (uncooked)

Add in 1/3 cup Chipotle Salsa ( not the Tabasco Chipotle sauce).

Next, add a 1/3 cup of red onion, finely chopped.

Pour in the lightly beaten egg whites.

Mix ingredients together well, but do not over mix. Shape the mixture into four even patties. They will be very moist and sticky. You can also prepare these ahead of time, and place into fridge until you are ready to cook them.

Heat a large non-stick skillet over medium-high heat. Add in 1 tbsp. of olive oil.

Place the chicken burgers into the skillet.

Cook the burgers about 6-7 minutes per side, until the chicken is completely cooked through.

While the burgers are cooking, toast the hamburger buns. Slather the tops and bottoms of each bun with the honey mustard.

Place the chicken patties onto the bottom halves of the buns. Top each with about a 1/2 cup of the slaw, and finish with the top half of the bun.
