Spinach and Chive Egg Casserole

Ingredients

  • 6 eggs
  • 1/3 cup fresh chives , chopped fine
  • 1 cup fresh spinach , chopped small
  • 1/2 cup coconut milk ( I used full fat)
  • 1/2 tsp garlic salt ( I used Real Salt Garlic Salt)

Instructions

  • Preheat the oven to 350°. Whisk the eggs in a bowl, add the coconut milk, spinach, chives and garlic salt. Mix well.
  • Grease an 8x8 square baking dish with butter. Pour in the egg mixture. Place into preheated oven and bake for 30 minutes or until eggs have set.
  • Let cool for a few minutes, then cut and serve.
