Jalapeno Pumpkin Seed Dip

Ingredients

  • 3/4 cup raw pumpkin seeds (preferably soaked and dehydrated)
  • 2 med/large jalapenos , finely chopped
  • 1/2 cup water
  • 1 tsp fresh lime juice
  • 2 tbsp sour cream (organic, if possible)
  • 1/4 cup fresh cilantro
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp smoked paprika
  • 1 small clove garlic , minced

Instructions

  • In a blender, add all of the ingredients. Blend until it forms a smooth puree. Check seasoning and adjust if necessary. Refrigerate for at least six hours before serving. Serve with sliced cucumber, chips or other raw veggies.
