Ingredients

  • 16 oz . package of cherry tomatoes (medley or just red)
  • 1/2 cup thinly sliced green onions (green and white parts)
  • 2 tbsp chopped fresh Italian parsley
  • 2 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 1/2 tsp coconut sugar (can sub regular sugar at a 1:1 ratio)
  • 2 tbsp finely grated parmesan cheese (not the stuff in the blue can)
  • 1/2 tsp dried oregano
  • 1 clove of garlic , minced
  • black pepper to taste

Instructions

  • Add the tomatoes, green onions and parsley to a medium bowl. In a small bowl, whisk together the rest of the ingredients, add it to the tomato mixture, and gently toss to coat. Cover and place into fridge to let marinate for several hours or overnight.
