Ingredients
16oz. package of cherry tomatoes(medley or just red)
1/2cupthinly sliced green onions(green and white parts)
2tbspchopped fresh Italian parsley
2tbspextra virgin olive oil
2tbspwhite balsamic vinegar
1/2tspcoconut sugar(can sub regular sugar at a 1:1 ratio)
2tbspfinely grated parmesan cheese(not the stuff in the blue can)
1/2tspdried oregano
1cloveof garlic, minced
black pepper to taste
Instructions
Add the tomatoes, green onions and parsley to a medium bowl. In a small bowl, whisk together the rest of the ingredients, add it to the tomato mixture, and gently toss to coat. Cover and place into fridge to let marinate for several hours or overnight.
