Ingredients
1(16 oz) container of cherry tomatoes (medley or all red)
1english cucumber, peeled if desired, diced into 1/4 inch pieces (about 1 3/4 cup)
3/4cupthinly sliced scallions(green parts only)
Dressing:
2tbspextra virgin olive oil
1tbspwhite balsamic vinegar
1tspdijon mustard
1tbspminced shallot
1tspdried dill(or 3 tsp fresh)
sea salt to taste
Instructions
In the bottom of a large bowl, whisk together the dressing ingredients. Add the tomatoes, scallions and cucumber and gently toss to combine. Serve immediately.
