Ingredients
8oz. tomatillos(about 3-4 medium), husked, rinsed and cut into chunks
1medium jalapeño, ribs and seeds removed, finely chopped
2tbspminced shallot
1large avocado, halved, seeded and peeled
1/4cupfresh cilantro(you can use some of the stems if you like)
1tspfine sea salt or salt to taste
1/4tspground cumin
Instructions
Place all of the ingredients into the bowl of a food processor. Process until smooth, scraping down the sides of the bowl as needed. Place into an airtight container ( a mason jar works great!) and let chill for at least a couple of hours, then serve.
Notes
Tomatillos have a sticky film on them, which is why you want to give them a gentle rinse before using. You can make this spicier by including some of the seeds from the jalapeño.
