  • 8 oz . tomatillos (about 3-4 medium), husked, rinsed and cut into chunks
  • 1 medium jalapeño , ribs and seeds removed, finely chopped
  • 2 tbsp minced shallot
  • 1 large avocado , halved, seeded and peeled
  • 1/4 cup fresh cilantro (you can use some of the stems if you like)
  • 1 tsp fine sea salt or salt to taste
  • 1/4 tsp ground cumin


  • Place all of the ingredients into the bowl of a food processor. Process until smooth, scraping down the sides of the bowl as needed. Place into an airtight container ( a mason jar works great!) and let chill for at least a couple of hours, then serve.


Tomatillos have a sticky film on them, which is why you want to give them a gentle rinse before using. You can make this spicier by including some of the seeds from the jalapeño.
