Hey guys! Hope you all had a fantastic weekend. It was gorgeous here on Sunday, but it was also super HOT! It was definitely feeling like August in Texas. I’m not ready for Fall, but I sure am ready for the Fall temps. Late September and October are my absolute favorite months for running, and I can’t wait to do more outdoor running. It’s supposed to be in the 100’s again this week, and I’m craving dishes like these Healthy Salad Recipes.
Super easy salads that require very little time standing over the stove to make. Because nobody wants to do that right now. The Pancetta and Sprouted Lentil Salad is a particular favorite of mine. My husband and I both love the White Bean and Tuna Salad one. We have it probably three times a month. It is super filling and easy to make. Most of the time we eat it without the lettuce, but it’s good either way. Those two are both main dish salads, which can serve 2-3. Although, my husband and I polish off both usually. 😉
